L’Àtic Launches Evolución 2.0: Mallorcan Cuisine with a Modern Twist

 

 

With the arrival of spring, Palma de Mallorca transforms: the days grow longer, the breeze becomes gentler, and the city begins to regain its vibrant rhythm before summer. In this context, the restaurant L’Àtic, located on the seventh floor of Hotel Saratoga, launches its new tasting menu Evolución 2.0, consolidating the identity of Chef Juan Pinel, named Chef Revelación 2025 at the Premis Gastronòmics de Mallorca.

This menu combines traditional Mallorcan cuisine with Southeast Asian influences, interpreted with creativity and refined technique.

More than a menu, it’s a culinary journey that respects seasonal ingredients and local products, offering contemporary dishes with deep roots.
 

 

Evolución 2.0 Menu: A Journey Between Mallorca and Asia

Starters: awakening the appetite

- Seabream with pickled lemon: a refreshing and zesty bite to stimulate the senses.

- Beef with capers and almond: a reinterpretation of a 48-hour slow-cooked beef tongue stew, served on toasted brioche with fried caper flower.

 

Main Courses: technique and culinary memory

- Red prawn with Panang curry and potato: a tribute to southern Thailand adapted to local ingredients, rich in spices and depth.

- Red mullet with orzo pasta and squid: Mallorcan squid braised, mullet fillet grilled, orzo pasta and interior pâté, highlighting slow-cooked techniques and full utilization of the product.

- Porc negre with Jerusalem artichoke and dried apricots: low-temperature Mallorcan suckling pig terrine, crispy skin, reduced jus, complemented by sweet and earthy Jerusalem artichoke and dried apricots.

 

Desserts: freshness and creativity

- Orange, extra virgin olive oil, and rosemary: a citrus dessert evoking the Mediterranean.

- Carnival flower, San Simón cheese, and quince: a gourmet reinterpretation of a traditional sweet, balancing crunchy and creamy textures.
