History

In 1965, on the seventh floor, Hotel Saratoga opened a live music venue on its 7th floor. For years, it was a meeting point for Mallorca’s social scene, where live performances and a lively atmosphere turned every evening into a unique experience. Over time, the space evolved into a restaurant, preserving its charm and tradition. It wasn’t until 2006 that music returned once again, marking the beginning of a new era that combined gastronomy and live performances, establishing the Blue Jazz Club as a place where culture and entertainment come together.

The director, Francisco Borrás, a passionate jazz lover, had long dreamed of creating an authentic live music club within the hotel. Before making that dream a reality, Borrás embarked on a journey through the United States, visiting legendary venues to absorb the true essence of classic jazz clubs. The Blue Note in New York served as his main source of inspiration to define the atmosphere, spirit, and identity of what would become the Blue Jazz Club, which opened its doors with a carefully curated program of live concerts every Thursday, Friday, and Saturday night.

 

 

 

A year later, Geoff Frossell, a London-born jazz trombonist, suggested introducing a new format: Monday jam sessions. The initial reaction was: “Are you crazy? On a Monday?” Geoff, who had already founded the first Monday Night Jazz Jam Session in 2001 at the Real Club Náutico de Palma, helped turn that crazy idea into reality in May 2008, when it became an essential meeting point for musicians and jazz enthusiasts alike.

 

Local, national, and international artists have graced the stage of the Blue Jazz Club, turning the nights at the Saratoga into a meeting point for lovers of live music, improvisation, and Palma’s most authentic atmosphere.

Over the years, the club became an icon of jazz in Mallorca, a place where passion, creativity, and elegance came together to bring a legend to life.

Today, it has become a gastronomic reference in Palma under the direction of Chef Juan Pinel, offering some of the finest culinary creations through both its Tasting Menu and à la carte options.

Starting this October, it will share the space every Thursday with the live concerts, enriching and adding even more value to the experience enjoyed by our guests.

The legend that grew over the years is now coming back to life, and all of us at the Saratoga family are truly excited to continue writing this story for many more years to come.

Dinners at L’Àtic Restaurant

As evening falls, the 7th floor of Hotel Saratoga transforms to offer a unique experience in Palma: dinner and live music on the same stage. The space, shared with L’Àtic Restaurant, combines the finest Mediterranean cuisine with the unmistakable spirit of jazz. Dinner is served until 9:00 p.m., creating a perfect transition between the pleasure of the table and the magic of music.

Located on the top floor of the hotel, L’Àtic Restaurant offers some of the most impressive views of Palma. Its intimate, elegant, and relaxed atmosphere provides the perfect setting to enjoy a dinner with personality, accompanied by the best soundtrack. Warm lighting, attentive service, and an inviting ambiance set the stage for the night before the first notes fill the air.

 

Juan Pinel, Chef at L’Àtic Restaurant

Recognized as “Revelation Chef” at the 2025 Premis Gastronòmics de Mallorca, Juan Pinel stands out for his innovative approach and passion for contemporary cuisine.

Regarding his cuisine, Juan describes himself as being in “constant renewal”, while always respecting the product and its legacy. His ability to combine high-quality local ingredients with modern techniques makes every dish a unique experience.

Pinel has also participated as a speaker or jury member in numerous competitions and gastronomic fairs such as Madrid Fusión, Horeca, and Proturchef, among many others, including the III Vegan Cooking Contest Ciutat de Palma. He has also collaborated in several charitable culinary projects, reflecting his strong commitment to gastronomy and the community.

. ¿Ticket price?
The ticket price is €15 and includes one drink.

. ¿Where can we buy tickets?
Tickets for any scheduled concert can be purchased at the Hotel Saratoga reception. They can be bought in advance or requested via email at bluejazzclub@hotelsaratoga.com

. ¿Can I change the date of my ticket?
Once purchased, tickets cannot be exchanged for another day in case of no-show. Tickets are not nominative.

. Program: The monthly program will be sent by email to our client database upon request and will be published on the website in the Program section.

. Concert schedule: 10:00 p.m. to 12:00 a.m. Entry will be allowed from 9:45 p.m.

. ¿Is it possible to have dinner before the concert? Yes, it is possible. At L’Àtic Restaurant, dinner is served with prior reservation. Tables can be reserved until 9:00 p.m. Enjoy a exquisite dinner followed by the scheduled concert (no ticket required).
